Quick banana split without ice cream maker

suitable for: vegan, lactose-free, gluten-free, nut-free, soy-free, paleo, raw food, low-fat

Yep, this messy heap of deliciousness is a Banana Split. My very first one actually.

There are many variations, but the classic banana split is made with scoops of vanilla, chocolate and strawberry ice cream served in a row between a banana that is cut in half lengthwise (hence the name). In no particular order, pineapple, strawberry and chocolate sauces are spooned over the strawberry, chocolate, and vanilla ice cream. It is garnished with crushed nuts, whipped cream, and maraschino cherry.

My variation also has vanilla, chocolate and strawberry. It even has mango cubes, crushed nuts, pear, shaved chocolate and homemade dark chocolate sauce! I will probably have to make this dish again because you can barely recognize the banana split as it is completely buried in toppings, lol!

(For my next one, i want to work with raspberries, caramel sauce, shaved chocolate, caramelized bananas(!), perhaps coconut whipped cream and vanilla ice cream only.)

Ingredients

Banana Split

2 Bananas

Vanilla Ice Cream:
2 bananas, peeled, chopped and frozen
about 1-2 tsp vanilla extract

Strawberry Ice Cream:
2 bananas, peeled, chopped and frozen
1 cup strawberries, frozen

Chocolate Ice Cream:
2 bananas, peeled, chopped and frozen
1-2 tbsp cacao powder

Chocolate Sauce
a handful of FRESH dates (or dried and soaked in warm water for smoother blending)
1 tbsp or more cacao powder
plant milk, as needed

also:
- a high-speed blender or food processor (NO NEED FOR AN ICE CREAM MAKER!)

Instructions

If you want to make your own chocolate sauce, prepare that beforehand like so: Just blend up cacao/carob powder, plant milk, and dates. That's it. The sauce should be liquid but not too runny.

Then start with the vanilla ice cream.

Vanilla Ice Cream:
Add your first two frozen bananas to a blending machine (high-speed blender or food processor) and blend. Add the vanilla extract, blend some more, grab a bowl or tupperware container and transfer the ice cream into that. Place in freezer while you prepare the next two ice cream flavours.

Strawberry Ice Cream:
Now repeat. Add your next two frozen bananas to a blender or food processor (i always use the food processor nowadays because i find it so much easier!), then add your frozen strawberries, and transfer it into another container. Place in freezer.

Chocolate Ice Cream:
The reason why i chose this order is so that i wouldn't have to clean out the food processor as to not stain the next batch of ice cream. Clever, eh?
Anyway. Add your last two bananas to the processor and watch the magic happen! Then add the cacao powder, and all that has been pink will turn chocolaty brown :)

Transfer to a container and place in the freezer for just a few minutes for everything to firm up a little.

To assemble, place one banana (sliced into two halves) in each plate or bowl. Scoop one scoops of each of the three ice creams onto each banana. Top off with each of the toppings, in my case fruit, shaved chocolate, crushed hazelnuts and chocolate sauce. Now, about that cherry on top... you will not find one on my banana split because I hate maraschino cherries and their artificial colour and hurt your teeth sweetness. Instead I chose to top mine off with fresh pear and mango, which I absolutely love.

Dig in and prepare for food coma!

Today is my me and Mr Fox's monthly anniversary. Since he is currently running around in the mud (he's doing a mud race / obstacle course thingy), i'm at home doing my things, blog and such, and thinking about what we could do to celebrate our little anniversary - except for cherishing this banana split which of course symbolizes the fact that we have not split up, bahaha!

But seriously.

I'm thinking about going to an African restaurant (the one where we first introduced our parents to each other) which will "culinarily prepare" us for our 3 week vacation in South Africa (where his mother now lives) in December.

We'll see. Perhaps my little fox will be way too tired after his mud race anyway, so maybe we'll just curl up in our little burrow and have a relaxed night in with candles, movies, popcorn, cuddles... or perhaps both, African restaurant + candles and cuddles and movies afterwards :)

What do you do for your anniversaries?

(make a Banana Split perhaps? - wink)
