Fluffy Fig Ice Cream (raw, vegan)

Quick 2-ingredient ice cream without ice cream maker

Preparation time: 5 mins + 3 hours freezing time

I'm back home from Thailand, and spring has sprung! The sun is out, flowers are blooming, the birds are chirping, and the time for some soft ice cream has come.

Why have i never thought of making nicecream using figs?

This is old footage that i'm using because i came home a day later than intended due to a massive flight delay and i don't have the nerve right now to compose a brand new blog entry, so nicecream it is! This recipe was originally intended to be Honey & Fig ice cream, however i realized that adding honey (or agave or maple syrup to keep it vegan) makes it way too sweet (and not vegan), and the fresh figs are sweet enough themselves.

Ingredients

4 large ripe bananas, peeled, chopped and frozen
4 fresh, ripe figs
1 tsp chia seeds (optional)

also:
- a high-speed blender or food processor (NO NEED FOR AN ICE CREAM MAKER!)


Instructions

Place frozen banana pieces into your blending machine or food processor, and blend until creamy smooth.

Add figs (i set one aside for decoration).

TIP: add ~1 tbsp ground flax/chia seed to your nicecream whilst blending - it does unspeakable things to the texture/consistency!


Blend until everything becomes a nice and creamy mass. Using a spatula, spoon or ice cream scoop, fill everything into a nice bowl or cup, and scoop away immediately! :)
