Plain Picture-Perfect Pancakes (vegan & gluten-free)

If you have not heard of Cherie a.k.a thrivingonplants yet, you have been living under a pancake rock my friend, and you've got to head over there immediately and marvel at her pictures! Her pictures are on point, especially her pancakes. Just aah. Look at it!

So I decided to try out her recipe that I found on her Youtube channel over here, the recipe takes only 3 ingredients and the outcome is amazing! I mean, just look at these! They are like the tiny tower of a princess or something. Princess pancakes.

Okay, I'll stop now.

But please try those pancakes! They are cooked without any fat, and the only ingredients are oats (i added some buckwheat though), banana and plant-based milk. So simple and easy! I can never get enough of pancakes.


Ingredients

Pancakes
1 cup buckwheat (or oat) flour
2 cups oats, ground in a blender into a flour consistency
2 cup of your choice of milk (i use soy milk)
2 ripe bananas
1 tbsp of coconut sugar or stevia (optional)
1/2 tsp cinnamon (optional but highly recommended)

Chocolate sauce
a handful of dates (FRESH or dried and soaked in hot water for easier blending)
1 tbsp carob or cacao powder
Water or soy milk, as needed (i use the water from soaking the dates)

Toppings of choice
Chocolate sauce
Apple sauce
Banana dices
Peach cubes




Instructions

First, if it's not already ground, grind the buckwheat and oats into flour. For this i simply use my blender and blend it up on high speed.

For the pancakes: Combine dry ingredients (ground buckwheat, oats, cinnamon) in your blender. Add the wet ingredients (milk, banana, sweetener). Blend until it's well combined and forms a thick but pourable batter. 
To cook the pancakes, preheat a frying pan on low to medium heat. If it's a non-stick pan, don't use any oil! If it's a regular frying pan such as mine, I usually use 1 tbsp oil to grease the pan for the first batch of pancakes (use a paper towel to spread it out and soak up the excess), but after that don't use any oil any more.

TIP: Test the heat of your skillet by throwing a few drops of water onto the surface. When the water sizzles, the pan is ready for the pancake batter.

Cook it on low on the first side until you see bubbles and/or the rims of the pancakes become matte as opposed to being shiny. Flip, cook on the other side until nice and golden. Repeat with the remaining dough.

In the meantime, prepare your chocolate sauce!


For the chocolate sauce: Blend up cacao/carob powder, water/soy milk, and dates. That's it. The sauce should be liquid but not too runny.

Now, when the pancakes are all nicely golden brown baked, pile them up and drizzle with the chocolate sauce, as well as some cinnamon and whatever fruits you can find!

You are done!
Oh wait, no. You need to make it look pretty before you eat it. No one likes ugly food, now do they? (the life of a food blogger... sigh.)


These pancakes are a weekly staple for me. I just love that they're made with what I already have in my pantry: oats, bananas, soy milk. The bananas naturally sweeten the pancakes, so there is no need for any refined sugar. 


BTW: I got a total of 20 little pancakes out of this! And yeah, we finished them all for breakfast (licks chocolaty fingertips).

Blueberry Buckwheat Pancakes

2 cups buckwheat flour
1 cup oats, ground in a blender into a flour consistency
2 cup of your choice of milk (i use soy milk)
2 ripe bananas
125g fresh blueberries

What i love about this blueberry variation is that the fresh blueberries change their consistency once they're baked. I've never tried cooked/baked blueberries before - but they turn get very sweet! (even though they were sour when they were still raw). And the flesh gets purple red (instead of white) and liquid. Super tasty!

Ever since i've discovered this basic pancake recipe, we've been making pancakes pretty much every single Sunday, hehe. #pancakesunday And it's great because it's not too sweet and you can eat the pancakes with savoury spreads, no problem. But my favourite combo is probably still peanut butter & banana slices or pb& j or just simple maple syrup :)
