Easter Buns

((') (') Good morning, Easter bunnies!

This is a family tradition. Every year at Easter we make our very special Easter Buns, using either "Quark├Âlteig", a dough made with curd cheese, or lately yeast dough. It's a great breakfast for Easter Sunday or Monday to make with your kids, family or friends. The more the merrier :)

Now for the Easter Buns, here's what you need:

Curd Oil Dough
- 150g curd, drained (vegan: use soy yoghurt instead!)
- 6 tbsp milk (vegan: use plant-based milk instead, e.g. soy, almond, oat...)
- 6 tbsp oil
- 75g sugar (or sub for agave syrup or even stevia)
- 1 package vanilla sugar
- 300g flour (gluten-free: replace with buckwheat flour)
- 1 package baking powder
- some canned milk for glazing (vegan: see above)

Mix all ingredients except for the canned milk thoroughly in a big bowl until it forms a smooth, soft, thick dough. Form it into various Easter shapes (rabbits, chicks, birds, sheep, ladybugs, or... Cheshire cats, lol), using raisins, nuts and chocolate to garnish, and place onto a baking sheet lined with baking paper. Bake for at least 15 minutes at 175 to 200° Celsius or 347 to 392° Fahrenheit.

For a less oily version, use yeast dough instead:

Yeast Dough
- 400g flour (gluten-free: replace with buckwheat flour)
- 100g margarine (or use oil instead! for 100g margarine use around 1/4 cup of oil)
- 1 egg (vegan: replace with 1 tablespoon cornstarch or ground flaxseeds + 3 tablespoons water)
- 100g sugar
- 1 pinch of salt
- 1 package dry yeast
- 200ml milk (vegan: see above)

Before baking, prove for 30 to 60 minutes to allow the dough to rise.
Bake at 180 to 200 °C or 356 to 392 °F for 40 minutes.
A great addition would be to put raisins or nuts into the dough before baking, making yourself some nice currant buns!

And just for the funsies let's see what our masterpieces looked like when i was younger :'D yeah... marvellous... you can see, true artists were at work.

I think our baking skills improved over time... kind of. Haha!
