Matcha Lemon Ice Cream (raw, vegan)

reading time: ca. 1 min

Quick superfood ice cream without ice cream maker

Preparation time: 5 mins + 3 hours freezing time
Main ingredients: banana, matcha, lemon
difficulty level: easy
serves: 1
suitable for: vegan, lactose-free, gluten-free, nut-free, soy-free, paleo, raw food, low-fat

This was originally created on occasion of St. Patrick's Day this year. And served in a Guinness glass! Could it be any more Irish? ;) It is perfectly fine for any other normal day as well though.

Due to the matcha green tea powder and the spirulina pills, it also makes for a good source of superfood minerals! Get in your greens, baby. You could even add a handful of baby spinach to this.
Ingredients

4 large ripe bananas, chopped and frozen
2 tsp Matcha powder
juice of 1/2 large organic lemon
5 small Spirulina pills, ground into powder

also:
- a high-speed blender or food processor (NO NEED FOR AN ICE CREAM MAKER!)

Instructions

Place frozen banana pieces in your blending machine (high-speed blender, food processor or juicer), add lemon juice, matcha powder, and - if you want to intensify the green colour - your spirulina powder.

Blend until creamy smooth and scoop into your favourite bowl - on in my case a giant Guinness glass. Overflowing glass of goodness! Sprinkled with buckwheat groats.

Same thing but without the spirulina powder, looking more citrus-y:

Morning Matcha "cup of tea" :)

Note: This is part of my raw vegan Ice Cream Galore this month!
