Tortillas 2 Ways (vegan)

A tortilla itself is incredibly simple (and easy to prepare), as it can be made by simply combining water, flour and a pinch of salt. Now be surprised with how versatile the humble tortilla can be! (other than being served with hot soup or chili)


Ingredients

2 tortillas (click here for recipe)

Savory:
Rice salad OR Chili mixed with rice
Lettuce
Tomatoes
Pickles
Guacamole or Hummus (as a spread)

Sweet:
1/2 banana
1 - 2 tsp almond butter (or any other nut butter) OR maple syrup
vegan dark chocolate
pinch of cinnamon
 

Instructions


For the savory version:

Warm the tortilla for about 10 seconds on each side in a hot skillet (warming it makes the tortilla more pliable and easier to wrap), and cover one side with a nice creamy spread like guacamole or hummus. Place some filling down the center of the tortilla: in my case rice salad (basmati rice, steamed broccoli and carrots, kidney beans, tomatoes, pickles, sun-dried tomatoes, lettuce, fried onions and hummus), but feel free to use any other savory filling such as  sweet potatoes, bean sauce, quinoa, lettuce, corn, salsa, black beans, squash, tofu, risotto, potatoes, curry, fried rice... Careful though: One of the biggest keys here is to not overfill the roll! Fold the filled tortilla into a nice burrito-style wrap. Serve with a fresh salad and a dollop of hummus or sauce.



For the sweet version:

Again, warm the tortilla in a hot skillet and melt some chocolate on top. Once it's half melted, place onto a plate and add cinnamon, banana slices and nut butter (or maple syrup), and maybe some fresh dates etc... Roll everything into a wrap and enjoy! - Alternatively, spread some melted chocolate or "Nutella" spread and/or nut butter onto the tortilla wrap. Place one peeled banana on one edge of the tortilla, and wrap the tortilla around the banana. Cut into 1 inch thick sections to make several bite-size rolls. 

You could even make Burrito Campfire S'mores by simply rolling up chocolate and marshmallows in a tortilla, wrapping it with foil and roasting it over a fire until the filling has melted! Mind blown.
