In an attempt to further support you in staying healthy during the holidays, here is a super healthy and filling oatmeal option for breakfast. It's nutty, fruity, sweet and satisfying.
Main ingredients: oats, almond milk, nuts, cinnamon

suitable for: vegan, lactose-free, gluten-free, soy-free
1/2 cup rolled oats
1 cup plant-based milk
1/2 cup water
1 banana, mashed
1/4 cup dried fruit such as cranberries or raisins
1/4 cup almonds, walnuts or pecans, chopped
2 tbsp shredded coconut or coconut flakes
1 tsp cold-pressed coconut oil (optional)
1 tsp unsweetened nut butter (I prefer almond or cashew)
1 tsp cinnamon
1 tsp ground vanilla powder or pure vanilla extract
1 - 2 tsp maple syrup (or to taste)
Bring water and plant-based milk to a boil. Then toss in the oats, mashed banana, shredded coconut, and dried fruit. Sir well, switch off the heat and let it simmer on its own. Stir in the cinnamon, coconut oil (or 1 additional tsp nut butter), vanilla powder and nuts, and keep the lid closed as it simmers.
After about 10 minutes your oatmeal should be ready, the consistency creamy and thick. Sweeten and garnish to your liking, and enjoy :)
I sweetened mine with maple syrup, and I sprinkled some fresh cranberries, 1 tsp cashew butter, some cinnamon and shredded coconut on top. As I took the pictures, I totally forgot about the crushed nuts that I had set aside, but I added them as I was already halfway through the oatmeal... whoops.
