White Bean Coriander Burgers (vegan & gluten-free)

After all this sweetness last month, it's about time for a savory counterbalance.

I love patties that are based on legumes as you can buy them canned so there's no any extra preparation time. In other words, I'm lazy. But considering that my boyfriend and I whip up something freshly cooked, baked or otherwise prepared every single day, I think it's perfectly legitimate to be lazy from time to time.

Other than burgers, my lazy day recipes include pasta, potato wedges, rice bowls and simple bread slices with spread. Highly recommended, quick, easy and still healthy!

WHITE BEAN CORIANDER BURGERS

Preparation time: 30 mins
Main ingredients: white beans, oats, carrots
difficulty level: easy
makes: 8 patties
suitable for: vegan, lactose-free, gluten-free, nut-free, soy-free, low-fat, low-sodium

Ingredients

Patties:

2 cups cooked white beans, drained
1/2 cup oats (gluten-free if gluten is an issue)
2/3 cup grated carrot
1 small onion, chopped
2 garlic cloves
1 flaxegg
1 tsp ground coriander
1 tsp paprika powder
1 tsp dried oregano
cayenne pepper, to taste 
salt and pepper, to taste

8 burger buns



Instructions

Start by heating a large skillet. Once it's hot, add the onion and cook, stirring, until tender (about 5 minutes). Add the garlic and the grated carrot, and continue to cook for another minute or two, until fragrant and the carrot has softened slightly. Remove from the heat. 

Using a food processor, a blender or an immersion blender, purée the white beans. Transfer to a bowl and stir in the onion mixture, the oats, the flaxegg as well as the herbs and spices. Season to taste and shape into patties

Heat the skillet you used for the onions before, and brown the patties for 4 minutes on each side on medium heat. Be careful when you turn them over (a spatula works well for this). 

Serve on whole grain (optionally gluten-free) buns, with the condiments of your choice. I had mine with romaine lettuce, spring onion, fried onions, sun-dried tomatoes, fresh tomatoes, cucumber and a super yummy mustard beer (weird but so good!) sauce, and my boyfriend also added some olives, pickles and pepperoni to his.
