Sweet and savory Lentil Pancakes (vegan & gluten-free)

Main ingredients: lentils, water, turmeric
difficulty level: easy-moderate
makes: 7 pancakes
suitable for: vegan, lactose-free, gluten-free, nut-free, and delicious "even so"

This is a more "oriental" take on pancakes because it contains lentils, turmeric, cinnamon and in my case plums. They were a bit on the dry side, but nevertheless quite tasty, and the best thing is, you can eat them either sweet or savory, which ever way you prefer!

To me, this is the perfect late-night summer dinner because it is spicy and satisfying, but also very light because it mainly consists of vegetables with a moderate amount of fat (to help digest Vitamins A and E) from the coconut milk.

Travel Diary | Rügen Island

I'm baaack... from my weekend trip to the sea ⛵️ You might not even have noticed that i was gone - because i scheduled the posts over the three days that i was absent -, but i actually spent the first May weekend in a sunny but terribly touristy town called Sellin on the island of Rügen (or Rugia) in the Baltic Sea. Yes we did have free wifi in our apartment and yes I did post here on my blog during our trip - but i thoroughly enjoyed my stay on Rügen Island - even though it's also good to be back home with my nana ice cream and ma bundles of bananas ripening by the window :)

Rügen Island is a fascinating place to be. It holds both sea shores and forest, sand and rocks, earth and water. And it's quite beautiful if you go to the right places - a.k.a. far off the chalky white tourist villas. Like this stunning black lake in the middle of the woods.

After whipping up a pretty bowl of Matcha + Chocolate Ice Cream, i just HAD to make Raspberry + Chocolate Ice Cream, which is more or less a combination of my beloved Raspberry Swirl ice cream and Chocolate ice cream, and it also contains a bit of matcha powder, but shhh!

I love these boots! And i love to wear black, even though it makes my skin seem really pale, but black is so handy! It's timeless, slimming, fits every occasion and every colour. I love it :)

Raw Vegan Gluten-free Caramel Fingers

This recipe was - except for minor changes - adapted from the wonderful Emily whose GOOEY CARAMEL CHOCOLATE BARS with BUCKWHEAT i saw on her blog and had to re-create and share!

I'm not kidding when i say these are dangerously delicious! Especially the caramel layer is super addictive, and i couldn't keep my hands off it whilst preparing it the night before... whoops. Anyway, most of it was still there the next morning when i took it out of the freezer to take some pictures of it. Ah, the tragic life of a food blogger, not being able to eat the food unless it has been recorded on camera for the blog beforehand ;)

Now lift the curtains for... drum roll...

Tomato Ginger Chickpea Curry (vegan)

This is another delicious curry recipe "a la Fredo" (meaning: made by my boyfriend, and no his name is not Fredo ;)

Anyway, this time we used legit Yellow Curry paste! The basic ingredients are cooked rice (formed into a little hill by using a round ice cream jug) with fried veggie curry (carrots, chickpeas, ginger, red onion, lettuce, broccoli, parsley root, curry paste and some herbs and spices). Now that's homemade cooking!

This was a total Sunday's leftover medley, and since we didn't have any coconut milk, we used tomato juice/pulp and a little soymilk instead. Hence the omitted coconut milk, this recipe is super low fat! And very rich in vegetables, ergo rich in minerals.

Peanut Butter Jelly Ice Cream (raw, vegan)

WE ALL SCREAM FOR ICECREAM BUT I SCREAM FOR NICECREAM!





Talk about a huge jar of awesomeness! Isn't the vegan lifestyle restrictive?! Yeah... ;)

As a child, i used to love a slice of bread with butter, peanut butter & jelly on top! Yes, both butter and peanut butter, haha! 

Anyway, fortunately peanut butter is vegan (i use organic, salt-free and oil-free peanut butter such as this one - the only ingredient is roasted peanuts!), so there's no reason why i shouldn't still enjoy my PB & J, right? 

And what sounds better than PB & J? 

PB & J ice cream!
