This carrot cake recipe is a mixture of my No Bake Carrot Cake and my Carrot Apple Oatmeal Muffins, and the result is super fluffy (even though it does not contain any eggs), sweet, but not too sweet, and above all super simple to make.

The credit for this goes to my sweet tooth boyfriend though ;)

DIY Pom Pom Bunny for Easter

reading time: ca. 3 min

Hey there little crafty bunnies :)
It's been such a long, long time since my last DIY post! My blog is just drowning in recipe posts at the moment - i'm sorry if you are not into gluten-free, vegan recipes.

So finally here is another Do It Yourself, just in time for Easter season! The last one i made was i think the Sleepy Bunny Bags from one year ago (?!) that can be used as lavender bags or gift/candy pouches.

Today's "Pom Pom Bunny" is adapted from Martha Stuart using her Bunny How-To PDF. I've been wanting to craft this ever since i stumbled upon the Pom Pom Bunny a year or so ago, so here we go!

Buckwheat Wraps with "Aioli" Bean Cream + Spinach Pesto (vegan & gluten-free)

reading time: ca. 1 min

Preparation time: 45 mins
Main ingredients: buckwheat, spinach, beans
difficulty level: moderate
serves: 2
suitable for: vegan, lactose-free, gluten-free, nut-free, and delicious "even so"

This recipe is a variation of Attila Hildman's recipe in his book Vegan For Youth. I changed some things, like making a Spinach Pesto instead of parsley (because i absolutely hate the taste of parsley -.-), and my wrap dough didn't turn out as nice as his because it broke when we tried to roll it up, but it was still super tasty!

Loads of pretty pictures below :)

Happiness.

reading time: ca. 1 min

Besides the solar eclipse, it's international Day of Happiness today! But honestly i'm not feeling very happy at the moment, so i thought that would be the perfect reason to make a post on happiness. What is happiness anyway? I don't mean that in a rainbows-and-unicorns kind of way, but true simple happiness. Perhaps that's a good place to start: simplicity.

Spicy Chili Chocolate Ice Cream (raw, vegan)

reading time: ca. 1 min

Quick ice cream without ice cream maker

Preparation time: 5 mins + 3 hours freezing time
Main ingredients: banana, cacao, chili
difficulty level: easy
serves: 1
suitable for: vegan, lactose-free, gluten-free, raw food, and delicious "even so"

Hello dear,

yes it's March and i'm currently freezing, but i am so glad that i made this for breakfast because the combination of chocolate and chili is just amazingly delicious.

Also, the warming spices help with getting your inner fire going (intentionally ambiguous ;), so there's really no reason not to enjoy this ice cream even though it's below zero outside.

DIY Coconut Pancakes + Homemade Olive Bread

reading time: ca. 2 min

Sooo... we had some fresh coconut meat left over, and some friends coming over for breakfast, so we decided to whip up some improvised pancakes that turned out to be pretty yummy and not too coconut-y at all! Can be served with sweet or savory spreads.

We also made some Homemade Oven Baked Olive Bread - recipe below!

Hey there, surprise post! For the next for weeks i'm going to upload a blog post on Friday as well - just because i have semester break and am finally through with my term papers, just the final touch is missing and then i'm clear of work! And because i've been making so many fun recipes that i want to share, i'll take the opportunity to post 3 times a week instead of 2.

So here's the first Friday's food post: DIY homemade fat-free Sweet Potato chippies with vegan, sugar-free "Catch-Up" Ketchup! Yeah... I made up the Ketchup from scratch, so i hope i get all the ingredients and their amount right :)

Fudgy Chocolate Sweet Potato Brownies (vegan & gluten-free)

reading time: ca. 1 min

Unfortunately, my love of brownies and sweet things does not fit with my fear of turning heads at the pool for all the wrong reasons.

However, I was lucky enough to come across the vegan, gluten-free, low fat lifestyle, meaning that I get to eat brownies that won't require a tent as a bathing suit cover-up {unless I eat the entire pan, which is VERY much a possibility} because they are absolutely fat-free (except for the glazing but that's optional) and made with sweet potato! Sweet, eh? :)

Maisy ❤ January + February 2015

reading time: ca. 3 min

It feels like ages since the last time i did one of these monthly favourites, so i'm a bit out of step. I feel bad about it (especially since it is one of my goals from the Day Zero Project... cough cough), but i haven't been reading anything but the huge exhausting novel The Moor's Last Sigh by Salman Rushdie because we analysed it at University, and i don't want to talk another single word about this bloody book, so instead i'll discuss 2 movies i watched and loved last month! The first one being Birdman.

Watched: Birdman (2014)

source: imdb
Birdman: Or (The Unexpected Virtue of Ignorance), directed by Alejandro González Iñárritu, features an assembly of Hollywood actors such as Emma Stone, Michael Keaton, Zach Galifianakis, Amy Ryan, Naomi Watts and Edward Norton, but it is not a Hollywood movie by far.

The Plot:
A washed-up actor and director, Riggan Thomson (Michael Keaton), famous for his role as iconic superhero Birdman decades earlier, struggles to mount a Broadway adaptation of the short story "What We Talk About When We Talk About Love" by Raymond Carver, whilst trying to cope with the loss of his faded Hollywood acting career and his dysfunctional family. Being constantly tormented by the voice of Birdman, who mercilessly criticizes him, Riggan battles his ego and attempts to recover his family, his career and himself in the days leading up to the opening of his Broadway play.

The Acting:
What happens if a bunch of excellent actors are all bundled up in the small area of a theatre stage... is art! Every single other actor in the production execute their roles with professionalism that most movies are lucky to see in just one of their actors. Each actor didn't wait for their time to shine to pull out the big guns; every moment of screen time was utilized to its full potential. There isn't a second where the audience's immersion is broken by an awkwardly delivered line or a slightly out-of-place facial expressions or emotion.

Spicy Pineapple Coconut Curry (vegan)

reading time: ca. 2 min

Preparation time: 25 mins
Main ingredients: rice, coconut, pineapple, curry
difficulty level: easy
serves: 2-4
suitable for: vegan, lactose-free, gluten-free, nut-free, and delicious "even so"

Yep, another Curry recipe. I just love anything to do with Asian stir-fry, rice, curry and spicyness.

Also, my boyfriend and i had lunch at a vegan-friendly restaurant thingy in my hometown. I had the vegan Green Thai Curry which tastes amazing even after the third time ordering the same dish (and the rice is sooo fluffy...!), but to be honest i think presentation-wise we almost did a better job with our homemade curries, both this one as well as the beautiful colourful Curry Coconut Rice Stir-Fry from last week :)

But see for yourself.
