Buckwheat Waffles (vegan Christmas)

It's not always easy to find a vegan option at Christmas parties and dinners, especially when it comes to cookies, pastries and other sweets, so here is my suggestion for a filling Christmas meal (either sweet as a dessert or savory).

I surfed the google waves and scrolled threw several recipes for vegan buckwheat waffles (by the way, if you want to know the most gorgeous post on winter waffles, go and admire the Snow day waffles, two ways by the talented Ashlae). In the end i opted for the Easiest Buckwheat Waffles (Vegan, Gluten-Free) recipe. Because i'm a lazy little panda. I like it easy.

It has taken me approximately 8 months to bust out the waffle maker again that i used to make my Oatmeal Waffles last Easter. When it comes to new clothes and new appliances I kind of get intimidated, i want to preserve the "newness", and it takes a while until i finally try it out. But for Christmas - or actually for Saint Nicholas - i new that waffles were in order!

My Oatmeal Waffles back in April were thick, moist and chunky. Also nice, but this time i wanted something less stuffing, less gooey, something more crispy and thin. Like good Italian pizza. You know?

So instead of oats i went for buckwheat this time, and the texture was much lighter with a crispier exterior. Not bread-like or chunky at all! 

Warm waffles, hot cherries, melting coconut whipped cream... mhhh. 



EASY VEGAN GLUTEN-FREE WAFFLES

Ingredients

Waffles:
4 cups buckwheat flour *
2 tbsp baking powder
1 1/2 tsp salt
1 tsp cinnamon
4 tbsp ground flaxseed + 2/3 cup water, mixed to form a gel
4 cups non-dairy milk (just plain soy milk is fine)
1 cup sunflower oil (or melted non-dairy margarine)

Coconut whipped cream:
1 can coconut milk, refrigerated overnight
1/2 tsp vanilla extract OR 1 tsp xylitol OR 1 tbsp coconut sugar

Toppings:
Hot cherries
Maple syrup
Coconut whipped cream (see recipe)

*You don't have to use buckwheat flour, but I prefer its nutty, earthy flavour over the regular gluten-free flours. Also, i feel like gluten-free flour is often much more refined and blood sugar spiking than (whole grain) spelt or buckwheat flour.




Instructions

First, if it's not already ground, grind the buckwheat into flour. For this i simply use my blender and blend it up on high speed.

For the waffles: In a large mixing bowl, whisk together the dry ingredients. Create a well and add the wet ingredients. Whisk until smooth. Set aside. Turn on the waffle maker and lightly grease the iron with a little bit of sunflower oil. You'll want a thick batter, but you can thin it out with a little more non-dairy milk before cooking. Cook each 1/2 cup waffle for about 5 minutes.

In the meantime, prepare your coconut whipped cream!

For the whipped cream: CAREFULLY take out coconut milk from the fridge. Spoon off the thick fat from the top - this is your cream. Put what you spooned out into a mixing bowl (preferably a chilled metal bowl), add the sugar and beat until thick and fluffy. And voilĂ ! You got yourself some whipped cream.

Serve your warm waffles with whipped cream, hot cherries and maple syrup, or ice cream, or whatever you prefer!

The waffles can be stored in the fridge or freezer for easy grab + go breakfasts. Allow the waffles to fully cool. If storing in the fridge, place in an airtight container for up to 5 days. If freezing, place waffles in a sealable bag or container with a piece of wax or parchment paper in between each waffle so they don’t stick together. Reheat in an upright toaster or toaster oven. Slice in half width-wise + length-wise if needed to fit in an upright toaster.

To me, this is childhood. And Christmas. And the perfect addition to any breakfast or brunch or Christmas dinner!

These are vegan gluten-free chocolate banana pancakes (same recipe as these but with 1 tbsp of cacao powder mixed into it) with fresh raspberries, pecan nuts, peanut butter, maple syrup and coconut flakes.

By the way, my Christmas-y Outfit Of The Day for Saint Nicholas was my tacky reindeer jumper with a glittery red nose, my wine red velvet skirt, black tights and my black wedge boots. Why did i not use my reflex camera for the outfit photo, but my crappy phone instead? I don't know.
