Buckwheat Porridge with Apple Pear Compote

Hi Friends, i hope you all had a cozy Christmas and a not-as-quarrellsome time with your family :)

Usually porridge is made of oats (hence the name oatmeal, duh), but for this porridge recipe I experimented with cooked buckwheat for the first time, cooking buckwheat groats in soy milk with sweet banana, home-made apple pear compote and fresh blueberries.

Ingredients

Porridge:
1 cup buckwheat groats
2 cups soy milk (or 1 cup water, 1 cup soy milk) 
1 ripe banana
pinch of cinnamon

Apple Pear Compote:
1 apple 
1 ripe pear 
1/2 tsp cinnamon 
1 tbsp agave syrup or maple syrup (optional)

More cinnamon
Quinoa pops
Blueberries


Instructions

Porridge: Bring soy milk to a boil. In a bowl, mash your banana and add to the pot. As soon as it boils, toss in the buckwheat, stir well, switch off the heat and let it simmer on its own, stirring every few minutes. Add in the cinnamon for a bit of wintry flavour, and keep the lid closed as it simmers. 

In the meantime, prepare the apple pear compote.

Compote: Heat a small skillet over a medium heat. Chop the apple and pear, add to the skillet along with maple syrup/agave and cinnamon, and sauté over medium heat for 5 - 10 minutes. My apple and pear were quite juicy, but if you feel like your compote is not moist enough, you might want to add a splash of water or apple juice to it as you cook. Be careful though not to use too much fluid, or else you'll have to drain off the nice and sweet juice!

By now your buckwheat oatmeal should be cooked, creamy and thick. I noticed that cooked buckwheat somehow turns to a slightly brown/grey colour. Remove from the heat, stir well and serve up into a bowl. Top off with a heaping spoonful of apple pear compote and sprinkle your favourite toppings over the top! For me that's more cinnamon, quinoa pops and a handful of fresh blueberries. Yum!
