Millet "Rice" Pudding (vegan)

Millet has become my new favourite gluten-free grain and a great alternative to rice and quinoa. 

It contains a variety of minerals and trace elements, in particular silicon, iron (7 mg per 100g millet) and magnesium, which strengthen your bones, hair, skin and nails, and is great for anaemic (mostly iron-deficient) people like me. Above that, millet does not contain gluten (which is great for me!), and therefore is easy to digest, not forming any mucus in your organism.

So after making actual rice puddings (Rice pudding with home made Apple sauce and Coconut Rice Pudding), I thought why not make rice pudding with millet instead of rice? A friend actually mentioned that to me, and I thought I'd try it. 


Ingredients

1 cup millet *
2 cups milk of your choice - i'm using soy milk but almond milk would be even better
1 sweet banana, mashed (optional)

Toppings:
Sweetener of your choice such as maple syrup (optional) - i didn't use any
Fresh fruit, fruit purée or jam
Crushed hazelnuts + cinnamon to garnish
Chocolate Sauce
Pure peanut butter

Optional and additional condiments:

- shredded coconut
- nut slices (almonds...)
- seeds (chia, poppy, flax...)
- raisins
- ginger
- cardamom
- nutmeg
- orange or lemon peel
- vanilla
- brown sugar or coconut sugar
- cacao powder
- saffron
- fruit slices

...

* dry and uncooked, that is.

Instructions

Bring 1 cup of millet in 2 cups of soy milk to a boil. Let it boil for about five minutes, stirring frequently, careful not to let it scorch. Then switch off the heat and let simmer for about 10 minutes. 

After a total of 15 minutes your millet "rice" pudding should be ready, and the fluid should be completely absorbed. 

Sweeten and garnish to your liking (i used cinnamon, hazelnuts, sweet banana, a drizzle of peanut butter and some of my home made chocolate sauce). Cosy up to the fireplace or your bed, and enjoy!
