Kiwi Ice Cream (raw, vegan)

At first i was trying to find a quote on love or happiness or life in general, but then i thought: 
why not use my own words to describe my feelings?

Quick 2-ingredient ice cream without ice cream maker

Preparation time: 5 mins + 3 hours freezing time
Main ingredients: banana, kiwi
difficulty level: easy
serves: 1-2
suitable for: vegan, lactose-free, gluten-free, nut-free, paleo, raw food, and delicious "even so"

I know, i shared a lot of chocolaty dessert recipes for Valentine's Day (and my boyfriend and i shared most of them the week of Valentine's), but we actually didn't make anything fancy for V Day. Like i said: Why show a sign of love on a mandatory date instead of giving each other something whenever you feel like it? It's about what comes from your heart after all, not your brain, isn't it? 

But maybe i'm too idealistic.

Anyway, we ended up sharing a huge overflowing bowl of Kiwi nicecream. It was wonderfully fresh and tart, and the perfect way to start the day! We made this again the day after because we were pretty much into it, and this time added fresh strawberries and a bit of Matcha green tea powder. Perfect combination! Especially the sweetness of the strawberry was a nice addition :)


4 large ripe bananas, frozen
1-2 cup kiwis, fresh or frozen *
1/2 tsp Matcha powder (optional)

Chopped kiwis (and strawberries) to garnish

- a high-speed blender or food processor (NO NEED FOR AN ICE CREAM MAKER!)

* no kiwi birds were harmed during this process! ;)


Easy peasy: Break your pre-skinned, frozen bananas into pieces and place in your blending machine (high-speed blender, food processor or juicer - i use a food processor). Blend for a minute or two, then add your kiwis (and, if using, your Matcha powder). Keep blending until creamy smooth. That's it!

Using a spatula or spoon, scrape your Kiwi ice cream into a big bowl and garnish with kiwi pieces (and strawberries - the first strawberries this year for me! even though they were imported from Spain, but it was just 1.50 € for a 2 pound box and i was really craving strawbs!!). 

Now dig in and enjoy! Super refreshing, perfect for summer (but also for February, hahah! For me anyway :))
