Pumpkin Pie Pancakes with Chocolate Ganache {vegan & gluten-free}

Pumpkin Pie Pancakes, Pears and a sweet chocolate ganache - does anything scream "Happy Sunday" any louder than this?

What i love about these Pumpkin Pie Pancakes though - apart from the wintry taste of pumpkin and chocolate, maple and coconut of course - is that they aren't as thick and massive, but rather flat and light and even, which allows you to eat even more of them :)


1 cup buckwheat flour *
1 cup pumpkin purée - i'm using Hokkaido pumpkin that i cooked until it was soft right before making the pancakes!
1 1/2 cup of non-dairy milk or yoghurt - i'm using soy milk
1 ripe banana
1 tsp cinnamon
1/2 tsp baking powder
a pinch of salt
sweetener of choice, e.g. 2 tbsp agave or maple syrup or honey - i use 1/8 tsp stevia extract 
Coconut oil (or regular vegetable oil such as canola or sunflower oil) for frying

1 tbsp cocoa powder, raw and unsweetened
1/3 cup shredded coconut (optional)
a dash of soy milk, or to taste
1 tbsp agave syrup, or to taste

Toppings of choice
I chose: 1/3 cup Chocolate ganache + 1 Pear + Cinnamon powder
and later on: Pear compote + Beurre d'érable (maple butter) 

* you could probably also use oat flour instead!


First, if it's not already ground, grind the buckwheat into flour. For this i simply use my blender and blend it up on high speed.

For the pancakes: Combine the dry ingredients (buckwheat, salt, cinnamon, baking powder) in a bowl and stir. Then add the wet ingredients (milk, pumpkin puree, banana, sweetener). I actually cooked the Hokkaido pumpkin just before making the pancakes and then threw it into my blender along with the banana and my sweetener. I then poured the beautiful orange mixture into the bowl and whisked everything together. Set aside for 10-15 minutes.

In the meantime, prepare your chocolate ganache!

For the chocolate ganache: Blend up your cocoa powder, soy milk, sweetener and shredded coconuts using a hand-held blender or a high-speed one. That's it.

dough with a nice pumpkin swirl! Now let set for 10-15 minutes before baking...

Scoop your batter onto a lightly greased skillet using a spoon or a small ladle - aim for one or two heaped tablespoons per portion -, and gently spread out so the pancakes will be even and not as thick, so they'll be ready faster! Usually i cook my pancakes over medium-low heat for about 2-4 minutes, then flip, and repeat the same on the other side. But for these pancakes (maybe because the pumpkin puree makes them so moist and sticky?) i found that i had to use a little more heat and wait for around 5 minutes before flipping it around.

TIP: Test the heat of your skillet by throwing a few drops of water onto the surface. When the water sizzles, the pan is ready for the pancake batter.

The nicely golden brown baked pancakes i piled up and drizzled with the chocolate ganache, as well as some cinnamon and a tiny bit of stevia powder. Oh and of course my pear that i cut into heart shapes, haha!

Along with that i had a glass of fresh orange juice which fit the wintry taste of the Pumpkin Pie Pancakes perfectly :)

Now onto the food porn:

BTW: I got around 8 medium-thin pancakes out of this! And yeah, i finished all of them by myself... 

Speaking of that, two of my very lovely flatmates joined me in the breakfast party and made some very lovely waffles as well as a pear compote with vanilla bean and, erm, rum. Which i then also piled up on my pancake stack along with a little bit of maple butter :)))
