Oven Baked Carrot Fries

Okay so i had a bag of carrots and didn't know what to do with them. So i thought i'd make them into a nice batch of "french fries", googled a recipe for that, and made them accordingly.

To be honest, i expected a little bit more, but maybe i should've used more oil and/or more salt, or maybe the carrots weren't fresh enough. Don't get me wrong: they were still a great snack for in-between, so i want to share the recipe either way :) 

Though i would advise you to eat them with something salty and flavourful, like guacamole or hummus or carrot hummus or garlic aioli or crunchy peanut butter...


1 pound carrots
1-2 tbsp olive oil
salt and pepper, to taste
herbs like rosemary, thyme, oregano... (optional)
spices like cinnamon, bell pepper powder, garlic... (optional)


It's almost ridiculously easy: Wash your carrots - or other veggies such as zucchini (i added one of those), pumpkin, potato, sweet potato,... - and cut them into 1/2-inch wide strips, resembling french fries. 

Then, spread them out on a paper baking sheet, toss in oil, salt and seasoning, and bake for 20-30 minutes at 400°F, or until golden brown and crisp. Keep an eye on them making sure not to burn. Good luck :)
