Birthday Brunch (23)

Hello lovely,

today i'll keep it super sweet and short because it is my birthday (23! oh my, i'm getting old now...), and i want to enjoy the day with my family and friends instead of spending ages in front of the pc. Which is why i decided to only post a light content of photographic birthday brunch impressions:

Wearing: a dark blue polka-dot dress (H&M) and a one-sided French braid ending at the nape of my neck - i call it the Half-done Halo braid :)

Vegan Pumpkin Cream Soup

Preparation time: 1 hour cooking time
Main ingredients: pumpkin (hokkaido), soy milk, garlic 
difficulty level: easy
makes: 2-3 servings
suitable for: vegan, lactose-free, gluten-free, nut-free, paleo, and delicious "even so" : )


1 hokkaido pumpkin, chopped into cubes (the skin is soft and edible!) and roasted in a pot or pan
½ onion, roasted in a pot or pan
canola oil to roast pumpkin and onions in
1 cup of soy milk or any other plant-based milk
pepper & salt

Vegan Plum Cake 

Preparation time: 10 mins + 30-40 mins baking time
Main ingredients: plums, almonds, spelt flour, oats 
difficulty level: easy
makes: 1 cake
suitable for: vegan, lactose-free, wheat-free, and delicious "even so" : )


2 cups (200g) almonds, blended into meal
3/4 - 1 cup (100g) wholegrain spelt flour
½ cup (50g) rolled oats, blended into meal
½ cup (125g) margarine, or additional almonds
3 tbsp canola oil
1 package of baking soda
2 tbsp brown sugar
2 tbsp coconut blossom sugar
2 tbsp Xylitol
a pinch of salt

1 pound (500g) plums
