This is a low-fat, raw-vegan heavenly chocolate cream creation that is made with avocado, banana and cocoa powder which as a super healthy trinity yield a stunning CHOCOLATE CREAM! i love how nature provides us with all-natural desserts! So dig in, girl.
Ingredients
Crust
1 1/2 cups buckwheat (alternatively: nuts or oats)
1/2 cup shredded coconut
1 cup dates, pitted and soaked (or sub for other dried fruits)
Pinch of cinnamon (optional)
Cream *
1 large very ripe avocado
3 large very ripe bananas
1/3 cup agave syrup, or to taste
1/4 cup unsweetened cocoa powder
also
- a food processor or blending machine
- a spring-form or pie pan (i used a 10 inch)
Instructions
For the crust pulse buckwheat and coconut in a food processor or blender until they're the size of crumbs. Add soaked dates and pulse until it lumps together. ** Feel free to add cinnamon, salt, vanilla or some sweetener here. Press into your spring-form or pie pan and stick in the fridge.
In the meantime make the chocolate cream. Blend/process all listed ingredients until silky smooth. Pour the filling into the prepared crust and freeze for 1 hour or refrigerate overnight to 1 day to set. The next day you'll wake up happily to a ready-to-eat cream cake that will probably be gone by noon :) I spontaneously decided to add some raspberries on top for a fruity note!
That's it! Enjoy : )
Note: This might be somewhat embarrassing to admit, but... i actually ate this entire pie by myself one time... yep. it's that good. (that's why i make these cakes only once in a while - otherwise i would be one giant egg on two feet like Humpty Dumpty, haha!)
* Instead of the listed cream ingredients you could also use twice or more the amount of this 5-minute Chocolate Pudding recipe!
** Note: i did not have my good ol' trusty high-speed blender when i whipped up this cream cake, so the crust turned out a little too crumbly! But it tasted absolutely amazing anyway : )
