Carrot Hummus

A few days ago we went out and had a nice meal at a local Vegan Salad Bar. I had a veggie plate and a batch of carrot hummus - which tasted so good i decided to recreate it. So here it is: my own improvised and super-tasty Carrot Hummus!

Ingredients

2-3 large carrots (for a smoother consistency: COOKED!)
3 tbsp sesame seeds (or a handful of almonds)
little bit of sesame oil if possible
2 tbsp cold-pressed olive oil
1 tbsp cold-pressed canola oil
2 tbsp orange juice (or 1 tbsp lemon juice)
1 clove garlic (or 2 if you really like garlic)
1 tsp cumin
½ tsp coriander
1 tbsp raw cold-spun honey
1 tsp ground black pepper
pinch of sea salt
1 tbsp Maca powder (optional)
1 tbsp oats (optional)


Instructions

Place everything in a food processor or blending machine and blend until it forms a thick, smooth paste. If you use cooked carrots, it will be a lot creamier.*
Taste great served with Sushi or just any chopped vegetables!

* It looks a bit chunky in the picture above, but really it turned out a nice oily spread and aaargh, it's super tasty - i could barely keep myself from scooping it  down just like that, ha ha!
