Mango Summer Salad

Main ingredients: lettuce, cucumber, mango
difficulty level: fool-proof-easy
serves: 4
suitable for: vegan, lactose-free, gluten-free, paleo, raw food, and delicious "even so"

Ingredients

around 5 oz corn salad or baby spinach any other leafy greens
1 chicory
2/3 cucumber (i used 1/2 cucumber and 1/3 zucchini)
1 mango
3 artichoke hearts (optional)
a few cherry tomatoes
1 small red or yellow bell pepper
1 red onion and/or scallions
a handful pistachios, unsalted
a handful cashews, unsalted
3 tbsp cold-pressed canola oil
1 tbsp balsamic vinegar
salt, pepper, herbs and spices to taste

Instructions

Mix everything in a big bowl. Season to taste. Let salad marinate for around 15 minutes. Done.
