Raw Vegan Whipped Ceam (Coconut Cream)

COCONUT WHIPPED CREAM

Preparation time: 5 mins (+ overnight refrigeration)
Main ingredients: coconut milk
difficulty level: easy
serves: 1
suitable for: vegan, lactose-free, gluten-free, nut-free, paleo, raw food, and delicious "even so"

Ingredients

1 can full fat coconut milk, refrigerated overnight *
1/8 tsp vanilla powder OR ½ tsp vanilla extract OR seeds from ½ vanilla bean
1 tsp agave syrup OR 1/8 tsp stevia OR 2 tbsp coconut blossom sugar

To make the whipped cream: Right before serving CAREFULLY take out coconut milk from the fridge. Spoon off the thick fat from the top - this is your cream. Put what you spooned out into a mixing bowl, add the sugar and beat until thick and fluffy! Spoon onto your ice cream and voilà! You got yourself some whipped cream. 

* for a 100% raw version you can blend young Thai coconut meat with coconut oil and let it set in the fridge until firm!

DIY easy Birthday Card detail + Origami Hearts

dear digital diary,
today i wrote a birthday card for my dear friend K. to add to her present - and came up with a sweet little trick to attach a present to the birthday card and also personalize the card at the same time. including earrings and origami hearts. yeah, i doubt that anyone has ever done it like this before, so i thought i'd share this little quick tip with you. it's very easy, but still pretty cute and the perfect way to render a special touch to your regular postcard. 

also it's the perfect last-minute solution. cough-cough.
