Very Cherry Ice Cream {raw vegan & gluten free}

Preparation time: 10 mins + 2-4 hours cooling time
Main ingredients: cherries, banana
difficulty level: easy, fool-proof
serves: 2-4
suitable for: vegan, lactose-free, gluten-free, nut-free, paleo, raw food, and delicious "even so"


around 2 ½ cups cherries
4-5 bananas
1 fresh date (optional)
1 tsp Maca powder * (optional)
- a blending machine or food processor (NO NEED FOR AN ICE CREAM MAKER!)

Wash, stem and pit cherries **. 

Blend well, then add bananas. If you like it to be a bit sweeter, add 1 fresh date or 3 dried ones. Also, add a bit of Maca powder. Blend. Purée should be thick and creamy. 
Fill into container (Tupperware box, popsicle molds, jam jar...) and place in the freezer for couple of hours. Thaw in microwave or warm water bath before serving (not too long though).

* if you're using freshly picked cherries, you should probably take the time to pit the cherries by cutting them in half and checking for - heads up, it's getting gross - maggots. yep. luckily you see them directly when cutting open the cherries. but, well, it's still some nasty business.

** so what the heck is this Maca? It's a rootlike plant from Peru that is mainly used as a spice or as a supplement for flour and sauce thickener (similar to Chia, Hemp seeds and Quinoa flakes). Maca can be a bit bitter in taste, but is of very high nutritional value, since it contains plenty of calcium and potassium, as well as iron, iodine, selenium, magnesium, copper and zinc. it acts as a great source of proteine, carbohydrates and fiber, which will increase our physical and mental capability. (it's also said to be an aphrodisiac, hehe ;)
